An indirect type solar dryer combined with a charcoal burning stove that may be used for drying fruits was developed, built and assessed. The research primarily attempted to solve the issue connected with the fact that solar dryers are effectively operational only when there is adequate sun energy. Hence, an extra method of providing heat was added so that drying may be made continuous throughout the night time and in rainy seasons. Solar food processing is the effective and affordable option for addressing various food issues in the postharvest stage and also to the world’s energy needs. Solar dryer appears to be a very helpful equipment in the point of view of energy saving and environmental pollution. It saves quite a lot of energy or fossil fuel and also beneficial in the areas of quality of dried goods, space need, and capital cost. An indirect forced convection sun dryer combined with packed bed sensible heat storage medium was created and investigated at the climatic conditions of Chennai, India. The experimental equipment comprises of a blower, solar flat plate collector with corrugated absorber plate (2 m2) and a drying chamber. For the construction of solar collector, drying chamber and connecting ducts, Galvanized Iron sheet was chosen and pebbles opted for the porous thermal storage medium.
