| Abstract: | Palm jaggery plays a significant cultural and economic role in many countries, particularly in India, Thailand, Sri Lanka, and the Philippines. It serves not only as a traditional food item but also as a vital source of income for rural communities engaged in sap collection and jaggery production.Palm jaggery production is centered in countries like India and Thailand, with trade expanding globally due to the rise in demand for organic and unrefined sweeteners.
